  • Job Summary:

    The Sous Chef Chinese will be responsible in maintaining a high standard of all Shang Palace Kitchen preparation, service, and hygiene in his Production Kitchen, according to the standards required by the management. Chinese Sous Chef is fully responsible for all the Chinese Kit production area in absence of the Executive Chinese Chef.

    As a Chinese Sous Chef, we rely on you to,

  • Contribute to menu creation by responding and incorporating Guest feedback.
  • Be environmentally aware.
  • Control costs without compromising standards, improving gross profit margins and other departmental and financial targets.
  • Support brand standards through the training and assessment of your team.
  • Ensure food stuffs is of a good quality and stored correctly.
  • Ensure the consistent production of high-quality food through all hotel food outlets.
  • Report on maintenance, hygiene, and hazard issues.
  • Ensure resources support the business needs through the effective management of working rotations.
  • Manage the kitchen brigade effectively to ensure a well-organized, motivated Team.
  • Manage all aspects of the kitchen including operational, quality, and administrative functions.
  • Create and demonstrate new authentic dishes and traditional techniques for the team on a regular basis.
  • Provide ongoing pieces of training for the team.
  • What we are Looking For:

  • Strong leadership skills.
  • Good communication skills.
  • Ability to work under pressure.
  • A creative approach to the production of food.
  • Excellent planning and organizing skills.
  • Positive attitude.
  • Ability to multi-task and meet deadlines.
  • Minimum 5 years of Traditional Cantonese Cuisine experience in related positions.
  • A chef with experience in Dubai and other international cities would be an advantage.
