- Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
- Assists other members of the kitchen brigade in ensuring that all day to day operational matters are handled on time and guest expectations are met
- Ensures that utensils is stored, prepared and secured hygienically and safely
- Maintains standards of hygiene and cleanliness in all kitchen and related areas
- Ensures that mise-en-place and preparation procedures are correctly followed
- Reports any engineering defects to immediate supervisors.
- Supervise the stewarding staff, including hiring, training, and evaluating employees.
- Order and inventory supplies, such as cleaning chemicals, dishware, and linens.
- Maintain equipment, such as dishwashers, ovens, and refrigerators.
- Ensure that the stewarding department meets all health and safety regulations.
- Develop and implement cleaning and sanitation procedures.
- Coordinate with other departments, such as kitchen and housekeeping, to ensure smooth operations.
- Resolve customer complaints.
